Menu Plan Monday




I went to a FANTASTIC Power of Moms Retreat up in Park City this weekend. I learned a ton about organizing, planning, and just being a better mom. So much to implement in our home. One of the gals in my discussion book is the creator of Healthy Mom's Kitchen. I've found several yummy recipes that I want to try this week. The site stressed low glycemic eating. I'm excited to learn more about it.

Breakfasts
Wholewheat Honey Muffins
Berry Blitz Crepes
Oatmeal
Egg Burritos
Organic Granola

Lunches:
1. Cheddar Potato Strips
Leftovers

Dinners:
1. Sunday Dinner with Family
2 Grilled Lemon Chicken with Cucumbers and Cantelope
3. Butternut Squash Enchiladas
4. Kid Friendly Quiche
5. Easy Shredded Mexican Chicken
6. Slow Cooker Chicken Parmesan with Sweet Potato Crescent Rolls
7. Taco Quesadillas

Snacks: Oatmeal Cookies

Menu Plan Monday

This weekend we stopped at the Big Red Barn in Santaquin that we've heard great things about over the years. We sampled the fruit salsa, jams, chocolate covered fruit, apples, ice cream, and cidar. Our favorite was the cidar and we'll have to go back with a cooler it was so good! They also had farm fresh eggs for only $3.50 a dozen.



We bought a fantastic cherry jalapeno salsa and several of the jams. Next time I want to get the apple butter. Seriously, it was divine! We'll definitely go back as more fruits and veggies come in season.

Organic Peanut Buttuer and Jam Sandwiches with Bananas

Menu Plan Monday



This week I am keeping it pretty simple and trying to use up what is in my cupboards. The good news is that I am flying through the Bountiful Basket full of fruits and veggies that we now get every week. Can't believe it used to take us two weeks to go through those!

Dinners:
1. Baked Potatos with Broccoli
2. Homemade Pizza
3. Fire Island Penne
4. Grilled Cheese with Ranch Potato Wedges and Fruit
6. BBQ Chicken in the Crockpot with Rice and Pineapple
7. Burritos

Lunches:
Quesadillas
Chicken Nuggets
Leftovers
Soup

Breakfast
Oatmeal
Eggs and Fruit
Cereal

For Later:
