Clean Out the Cupboards Challenge


While looking for new recipe ideas through orgjunkie.com, I stumbled upon the Clean Out Your Cupboards Challenge for January. Boy oh boy do I need this one! While my husband and I have attempted to live frugally this year, we ended up having some major expenses. Ie: totaled car and water damage throughout the basement. Unfortunately, during crisis times like these, we tend to head to the first restaurant we see when we get hungry. Bad news for the budget and bad news for the waist line - that is for sure!

So for the new year, we are back to the budget! The goal is $200 a month for a family of 4 for groceries and toiletries (excluding diapers). Here is what I hope to accomplish by cleaning out the pantry:

1. Eat out less by meal planning and using what I have.
2. Use up food before it goes bad
3. Have a more efficient kitchen
4. Need I add .... save money and live healthier!

I love getting a good deal. A few years ago, I could use the IHOP coupons that came in the mail and a few restaurant coupons from the Entertainment book, but there weren't many restaurant deals I could get excited about.

Best part - they are to YUMMY places that we already love to go to. We're talking Jason's Deli - delicious organic food. City Deals Date Night

I decided that my husband and I needed to try something new for our date nights ... and maybe even actually take a date night. Typically we get stuck in the dinner and a movie rut. Father's Day provided the perfect opportunity to surprise him. I arranged for a babysitter from 3:30-8:30 pm (a big things for me. I hate leaving my little people more than a few hours).

A few weeks before, I saw a great deal on City Deals. They had discounted gift certificates to Clas Ropes Course. Plus when you spent $50 you got a free $20 gift certificate to great harvest - which we love!

I also added in two discounted days passes to Seven Peaks. Fun in the sun for us this summer!

Fast forward to last Saturday, Clas Ropes Course in Provo had a Father's Day special complete with three hours on the course, a BBQ with smores, and an optional canoe ride down the Provo River. I sprung for it all. Keep in mind - I had just run my first 5K earlier that day. I must have been feeling adventurous!

We arrived just a teensy bit late and they put us in a group with another couple and a Dad with his two preteen kids. The first few activities were typical leadership/bonding/problem solving activities. You know, the one where you both have a rope tied around your wrists and you have to figure out how to get untangled from each other without taking them off? I swear I have done it a dozen times at Girls Camp, but we still couldn't figure it out. No worries, it was much more fun doing it with my husband!

For the next activity, we had to swing from one platform to the next. All of us. Without touching the ground. But first we had to figure out how to get the rope over to us. Johnny saved the day by sacrificing his shoes and using the laces/shoes to lasso the rope over to us. We made it all over to the other platform .... eventually and with a few bruises :).

Next, we had to figure out how to get our team members across a series of boards and stumps without touching the ground. It involved moving the boards around and was quite tricky!


My hubby is on the far right helping the little boy to safety.

And then came our favorite part! The part I was worried we would never get to because it took us so long to finish the bonding activities.


First we took a ride on this giant swing. You held on to a rope and your team mates hoisted you to the top. The hardest part was holding on until the very top. It was such a rush when you let go.

Next we went rock climbing. I am still attempting to figure out how people balance their feet on the itty bitty rocks.


And here we are are sitting and waiting for our turn to go down the zip line. Lucky for us, you get to climb to the top of the zip line pole. I saw lots of kiddos doing it and even a cute Grandma named Earlene doing it. It took Earlene awhile to get up there, but I figured if she could do it, so could I. So I scaled a wooden pole balancing my self on these much too small metal staples. But it was worth it because the zipline was lots of fun!


To conclude the evening, we canoed down the Provo River to Utah Lake. BEAUTIFUL! It was so relaxing and our arms definitely got a work out!

All in all - a fantastic evening. What did I learn?
1. My kiddos will survive for an evening without me.
2. It's good to try new things and step out of your comfort zone.
3. Anything is fun with my Johnny.
4. My body can do hard things.
5. It's worth it to plan date nights.
6. City Deals = Cheap Date Nights.
7. Trying new things doesn't have to be expensive!

Menu Plan Monday

I am so glad that I had a menu plan last week! We had a lots of stress and work to do with buying a new car. Ordinarily I would be justifying take out, but since I had a menu plan, I was able to easily get to work and cook from home instead. Sometimes it was simple, sometimes it took some time - but I did it! We did eat out once, but it is a big improvement over last week! Here is this week's menu.

Last week didn't go so well on following through. It just got too crazy! One recipe was a success, though. I loved Trainer Momma's Whole Wheat Waffles (link below). I made a batch and froze them for myself and the kiddos. They devoured them. So yummy! Especially with the peanut butter and blackberries.



My Tomato Swiss Chard Quiche looked better than it actually was. It was nice to experiment with Swiss Chard, but I wasn't in love with the taste.

And the quality is yummy! I am also trying to lose some weight so there may be a fun meatless meals and healthy substitutions. For example, we love quinoa and it is so filling!

Menu Plan Monday

Last week the Ham Cheddar Chowder was very delicious! We will definitely have that again. It's a good winter time recipe. The Crock Pot Italian Chicken was fast and moist, but I think that I will tweak it more to our liking next time. There are a few recipes that we didn't get to that I will be trying this week again. I will be filling in more as I find them!

Tot Week - On the Move

Tot Week was quite the adventure for us this week! We were a little busier than normal and were able to visit a lot of family and do new things.


Mini Diva's favorite activity was her first bowling trip. To say she loved it is an understatement. Most of the time Mini Dude took a nap, but he did join the little diva in pushing one of the balls. Sharing is always fun, right?


She picked out her own ball - she specifically wanted the orange one. She even insisted on carrying it herself after her dad helped her a few times. She did pretty well with all 8 lbs of it, but her dad was right there to help if it slipped.

Lining up the ramp and pushing the ball off was pretty fun, too. She was able to balance it on top just right. She would count to three and then push.

And then she would wait and watch how many were knocked down. I love her little bowling shoes. I didn't know they had them that small!


We also spent a day with cousins on Friday. I watched this little guy while his mom went to an appointment. It was good for Mini Diva to play with another littler person. We worked on sharing and using our nice voices.

The toddlers liked putting round pegs into their little cars. Balls were also a big hit.

And this little guy absolutely loved his grandma's swing!

That night we went to a fun local restaurant, The Mayan, where my dad works as a manager. The kiddos loved watching the divers and fire dancers. I wish I had my camera. We even got splashed! My dad brought the divers down for Mini Diva to meet. Her favorite part of the evening was when my dad brought out a chocolate and ice cream desert that had a large sparkler in it. She exclaimed, "Birthday cake for me?"


On Saturday we helped my brother and his family move. The mini diva had a hard day, but it was still fun to play with cousins in their new house. That night we went to her cousin's dance recital. Mini Diva LOVED it! She and her cousin danced on the stairs in the back. It was almost more fun to watch than the show. They also got in some quality time with their great grandparents.


At home, we had lots of fun with imaginative play. Mini Diva used her chairs and the water bottles to make a train for herself and her babies.


She also had a lot of fun of her Melissa and Doug foot set. She made many yummy foods for me to eat.
