Menu Plan Monday

Welcome to my Menu Plan Monday! Today begins the first week of the All You Grocery Challenge where I have $25 per person in my family per week. So I'll be pulling from my pantry and from the grocery deals. I am super excited to eat healthy and save money this month. Not to mention continue/start some great habits!
Breakfast:
Apple Muffins
Amish Baked Oatmeal - We already had this once over the weekend and it was a big hit! I am going to make a bigger batch and freeze some.
Scrambled Eggs with Wholewheat Toast
Crepes
Granola

Black Bean and Rice Burritos
Mac and Cheese, Peas
Grilled Bacon Apple and Cheddar Sandwiches

Menu Plan Monday

Very excited for this week! I visited Smockity Frocks's What's in Your Crock Pot post and found lots of yummy recipes to try! I'll be putting my crock pot to work this week.

But first, what went well last week .... the spaghetti with quinoa meatballs was a big hit with my family. I've been looking for more ways to use quinoa so I will definitely use it again for healthier and more filling meatballs.

The Homemade Cinnamon Rolls from Beauty and Bedlam definitely were VERY close to Cinnabons's. My brother and sister leapt over the back of the couch to get to the last one. Delicious!

Menu Plan Monday

This week will be a fun baking week. I haven't done too good at following a menu plan, but we are FINALLY over all our colds and I am ready to jump in 100 percent. Especially excited to make our own bread. I went to an Enrichment night and was introduced to a yummy, yummy recipe. After a trip to our local Good Earth, I now have gluten and I am ready to experiment. I'll let you know the results.

My favorite item that I am going to try - the Cinnamon Rolls that are rumored to be just like Cinnabon. We shall see!

Menu Plan Moday - Comfort Food

This week I am mixing comfort food with weight loss food. Looked up recipes for my favorite comfort foods on Weight Watchers. I found some good ones that I am giving a try! We are all recovering from bronchitis so I was looking for yummy things that weren't too hard to make.

Some of these are carry overs from last week that we didn't get to. I did make the Corn Clam Chowder and the Blueberry Oatmeal Muffins - both were a HUGE hit! Very delicious!

Menu Plan Monday

It's a New Year! This is my first complete meal plan of 2010 (momentarily I was sidetracked by catching TWO different colds. Lucky me!). Looking forward to trying all the yummy things! This recipe collection for the week incorporates several goals:

1. Eating from the Pantry - use up what we have!
2. Eating healthier! Snagged some great recipes from Chubbie Chica with Weight Watchers points
3. Making more from scratch. Found some fun new recipes to try from the Heavenly Homemaker.

Menu Planning Monday


This week I am using up leftover vegetables from last week. I am happy to say that I can make everything on my list without going to the store :). The breakfast menu is a bit repetitive, so I may pick up something from the store on Thursday to get us out of the muffin rut.

Mozzarella and Tomato

Thinly slice two large beefsteak tomatoes. Layer the slices with 4 ounces thinly sliced part-skim mozzarella and 12 basil leaves. Sprinkle the stacks with 2 teaspoons aged balsamic vinegar and 1/2 teaspoon salt.
Serving size: 1 1/2 cups
POINTS value: 4

Menu Plan Monday

A day late! We had a busy weekend - went up to my grandparent's cabin to enjoy the fall colors. One of my favorite meals from last week was a free dinner that I won from Dream Dinners - delicious Swiss Chicken! It reminded me why I love freezer meals. So fast and so simple! I'll need to stock up again for the holiday season.

I didn't have a chance to get to the store to get ingredients for some of the meals last week so some will be repeats.
